No-Bake Chocolate Cream Pie Bars
Cocoa crust, thick vanilla cream, glossy ganache – 20 minutes of work, the fridge does the rest
Three layers, no oven. A dark cocoa-almond crust gets pressed into a foil pan. A protein cream-cheese filling goes on thick and pale. Melted sugar-free chocolate pours over the top and sets into a clean slice line.
Hands-on time is about 20 minutes. Chill until the ganache is firm before you cut.
Why you’ll love these bars
- 12 to 13g protein per bar – dessert that actually holds you
- Only 6g net carbs – no graham crackers, no sugar
- 20 minutes of mixing, no oven
- Three clean layers: dark crust, thick cream, glossy top
- Slices neat from a foil pan
- Freezes well for later
Health notes
- High protein: Cream cheese plus a scoop of vanilla protein in the filling.
- Low carb: Almond-cocoa crust and sugar-free chocolate.
- No bake: You keep the cream filling cold and thick.
- Portioned: Nine bars from one 8-inch pan.
Key element – chill the cream before you pour the ganache
If the filling is still soft, the chocolate sinks and muddies the cream layer. Freeze the filled pan 20 minutes until the top feels set, then pour the ganache in one pass. That is how you get the clean stripe in the photo.
Ingredients
Cocoa crust
- 1 1/4 cups (125g) fine blanched almond flour
- 3 Tbsp unsweetened cocoa powder
- 3 Tbsp powdered erythritol or monk fruit
- Pinch of salt
- 4 Tbsp melted butter
- 1 Tbsp water, only if the mix is too dry to press
Cream filling
- 12 oz (340g) cream cheese, room temp
- 1 scoop (25-30g) vanilla protein powder
- 1/3 cup powdered erythritol or monk fruit
- 1 tsp vanilla extract
- 3/4 cup cold heavy cream
Chocolate top
- 4 oz (115g) sugar-free dark chocolate, chopped
- 1/3 cup heavy cream
- 1 tsp coconut oil (keeps the slice glossy)
Swaps
- No protein powder: Use 2 extra Tbsp powdered sweetener. Protein lands around 8g.
- Cookie crust: Crush 1 1/2 cups keto chocolate cookies and mix with 3 Tbsp melted butter.
- Dairy-free: Coconut cream plus dairy-free cream cheese. Chill longer.
- Milk chocolate top: Use sugar-free milk chocolate for a sweeter lid.
Instructions
| 1 | Press the crust. Line an 8-inch square pan (or a small foil pan) with parchment. Stir almond flour, cocoa, sweetener, and salt. Mix in melted butter until it looks like wet sand. Press firmly into an even layer. Freeze 10 minutes. |
| 2 | Beat the cream filling. Beat cream cheese, protein powder, powdered sweetener, and vanilla until smooth and thick. In a second bowl, whip the cold cream to stiff peaks. Fold the cream into the cheese mix. Do not beat it flat. |
| 3 | Layer and chill. Spread the filling over the cold crust in a thick, even layer. Smooth the top. Freeze 20 minutes until the surface feels set and does not smear when you touch it. |
| 4 | Pour the ganache. Heat the cream until it just steams. Pour over the chopped chocolate and coconut oil. Wait 1 minute, then stir until glossy. Pour over the filling and tilt the pan so it covers in one sheet. |
| 5 | Set and slice. Chill at least 2 hours, or until the top is firm. Lift out with the parchment. Cut into 9 bars with a hot, dry knife, wiping between cuts so the layers stay clean. |
Pro tips
- Room-temp cream cheese is non-negotiable. Cold cheese stays lumpy.
- Powdered sweetener only. Granular crystals grit the cream layer.
- A hot knife (run under hot water, then dry) is how you get a photo slice.
- Do not overheat the ganache. If it splits, stir in 1 tsp warm cream.
- Keep bars cold. The ganache softens on the counter.
