Molten Chocolate Lava Cakes
Two ramekins, a set rim, a liquid center – ready in 20 minutes
These are small chocolate cakes you underbake on purpose. The edges set. The middle stays liquid so a spoon opens a pool like the photo. Almond flour, cocoa, whey, and a square of sugar-free chocolate in the center do the work.

If you wait for a clean toothpick, you baked a brownie. At 10 to 11 minutes the edge should look cooked and the middle should still wobble. That wobble is the lava in the photo.
Ingredients
Batter (2 cakes)
- 2 Tbsp (28g) butter, plus extra to grease
- 1 oz (28g) sugar-free dark chocolate, chopped
- 1 large egg + 1 yolk
- 2 Tbsp powdered erythritol or monk fruit
- 2 Tbsp (12g) unsweetened cocoa powder
- 2 Tbsp (14g) fine blanched almond flour
- 1/2 scoop (15g) chocolate or unflavored whey protein
- 1/2 tsp vanilla extract
- Pinch of salt
Center
- 2 squares (about 10g each) sugar-free dark chocolate, for the lava
Swaps
- No whey: Add 1 extra Tbsp almond flour. Protein drops a few grams.
- Coconut oil: Swap the butter 1:1.
- Espresso: Add 1/4 tsp instant espresso to the batter. Darker cocoa taste.
- One mug: Bake the whole batch in one 8 oz mug, 12 to 13 minutes.
Instructions
| 1 | Heat and grease. Heat oven to 400 F (205 C). Butter two 6 oz ramekins well, including the rim. Dust with a pinch of cocoa and tap out the extra. |
| 2 | Melt. Microwave butter and the chopped chocolate 30 to 40 seconds. Stir until smooth. Let cool 1 minute so it does not scramble the egg. |
| 3 | Whisk the batter. Whisk egg, yolk, sweetener, vanilla, and salt. Stir in the chocolate mix. Fold in cocoa, almond flour, and whey until no dry streaks remain. The batter will be thick and glossy. |
| 4 | Fill and hide the square. Spoon half the batter into each ramekin. Press one chocolate square into the center of each. Cover with the rest of the batter so the square is buried. |
| 5 | Bake and serve. Bake 10 to 11 minutes until the edges are set and the center still jiggles. Rest 1 minute. Eat in the ramekin with a spoon. Do not wait – the lava sets as it cools. |

- Room-temp egg mixes smoother. Cold egg can seize the chocolate.
- Powdered sweetener only. Granular stays sandy in a short bake.
- Set a timer. One extra minute is the difference between lava and cake.
- If you invert them, run a knife around the rim and flip onto a plate. They look best in the ramekin.
