Low-Carb Eggplant Pizza Bites
Roasted eggplant rounds, tomato, melted cheese – 25 minutes, one sheet
These are mini pizzas with eggplant as the crust. Rounds roast first so they turn gold and hold a tomato slice. Cheese goes on last and melts over the edge, like the plate in the photo. No dough. No sauce jar with sugar.
Twenty-five minutes. One sheet. Eat them hot.

- Protein: Mozzarella plus a little Parmesan.
- Four servings: 12 bites, 3 per plate.
- Macros are per serving, not per bite.
Key element – roast the eggplant first, then add tomato and cheese
If you pile tomato and cheese on raw eggplant, the rounds steam and go soggy. Roast them 10 to 12 minutes until the tops look gold and herbed, like the top photo. Then add tomato and cheese and finish. That is how they stay bite-size pizzas.
Ingredients
Eggplant (12 bites)
- 1 large eggplant (about 1 1/4 lb / 570g)
- 2 Tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt + 1/4 tsp black pepper
Topping
- 2 medium tomatoes, sliced into 12 rounds
- 1 cup (110g) shredded mozzarella
- 2 Tbsp grated Parmesan
- 2 Tbsp chopped parsley
- Pinch of chili flakes, optional
Swaps
- Zucchini: Cut into thick coins. Roast 8 minutes instead of 12.
- Pepperoni: One slice under the cheese on each bite.
- Pesto: A thin swipe of pesto on the roasted eggplant before the tomato.
- Dairy-free: Use a shreddable almond mozzarella. Protein drops.
Instructions
| 1 | Heat and slice. Heat oven to 425 F (220 C). Line a sheet with parchment. Cut the eggplant into 12 rounds, about 1/2 inch thick. Pat them dry. |
| 2 | Season. Lay the rounds on the sheet. Brush both sides with oil. Sprinkle Italian seasoning, garlic powder, salt, and pepper so they look like the top photo. |
| 3 | Roast first. Bake 10 to 12 minutes until the tops are gold and the edges look dry, not wet. Do not add tomato yet. |
| 4 | Top. Put a tomato slice on each round. Sprinkle mozzarella and Parmesan. Bake 4 to 5 minutes more until the cheese melts and browns in spots. |
| 5 | Finish. Rest 2 minutes. Scatter parsley and chili flakes. Serve 3 bites per plate, like the photo. |
Pro tips
- Pat the eggplant dry. Wet rounds steam and never brown.
- 1/2 inch is the sweet spot. Thinner slices shrink into chips. Thicker ones stay raw in the middle.
- Salt the tomato slices on a paper towel for 2 minutes so they do not flood the cheese.
- A crowded sheet steams. Give each round a little air.
- Broil the last 60 seconds if you want darker cheese spots.
