High-Protein Loaded Steak Salad Bowl
Seared steak over a loaded bowl with a creamy drizzle — ready in 35 minutes
This high-protein loaded steak salad bowl sears steak cubes, then piles them on greens with avocado, tomato, a measured spoon of corn and black beans, and a few roasted potato rounds, finished with a sugar-free creamy drizzle like the glass bowl. Each serving has 38 g of protein and 12 g net carbs.
Low carb for a loaded bowl, sugar-free, and no sweet dressing.
Why you’ll love this bowl
- 38g protein per serving
- 12g net carbs
- Steak cubes on top
- Ready in about 35 minutes
- Creamy drizzle
- No sugar in the dressing
Health notes
- Protein: Sirloin, about 6 ounces a serving.
- Higher carb than a plain steak bowl: Corn, beans, and potato rounds are in the 12g.
- Sugar-free: The drizzle is yogurt and lime, not a sweet sauce.
- Portioned: A full cup of each add-in would land well over 12g.
Key element — measure the load
The bowl looks full because of the steak and avocado. The corn, beans, and potato stay at a few spoons so the serving holds at 12g.
Ingredients
Bowls (4 servings)
- 1½ lb sirloin, cut into cubes
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp chili powder
- 1 Tbsp olive oil
- 6 cups chopped romaine
- 2 avocados, cubed
- 1 cup cherry tomatoes, halved
- ½ cup corn kernels
- ½ cup black beans, rinsed
- 1 small potato, sliced thin and roasted
- ¼ cup chopped cilantro
Drizzle
- ½ cup plain Greek yogurt
- 1 Tbsp lime juice
- 1 Tbsp water
- Pinch of salt
- Pinch of cumin
Swaps
- No potato or corn: Net carbs drop under 12g.
- Chicken: Same weight. Protein stays close.
- Store dressing: Check the label. A sweet one is not in the card.
- Extra beans: A full can pushes the bowl over 12g.
Instructions
| 1 | Roast the potato. Heat the oven to 425°F (220°C). Toss thin potato slices with a little oil and salt. Roast 15 minutes until the edges brown. |
| 2 | Sear the steak. Season the cubes with salt, pepper, and chili powder. Sear in oil over high heat, 2 minutes a side, until browned and still pink in the center. Rest 3 minutes. |
| 3 | Dressing. Stir yogurt, lime, water, salt, and cumin until it drizzles. |
| 4 | Build. Divide the greens into 4 bowls. Add avocado, tomato, 2 tablespoons corn, 2 tablespoons beans, and a few potato rounds. Top with steak and cilantro. Drizzle, like the photo. |
Pro tips
- A hot pan and dry steak are what brown the cubes. Crowding steams them.
- Rest the steak so the juices stay in the meat, not on the greens.
- The 12g counts the measured corn, beans, potato, and tomato. A second scoop is extra.
- Add avocado at the end so it stays green.
- Macros are per serving, 4 from this batch.
