These are classic lemon bars, rebuilt. The crust is almond flour shortbread. The filling is lemon, eggs, Greek yogurt, and a little whey so each square hits 11g protein. They stack like the photo – pale crust, a thick yellow layer, and a snow of powdered sweetener on top.

About 45 minutes in the oven. Chill them before you cut or the filling will smear.

A raw crust soaks and turns soggy. Blind-bake it until the edges just color, then pour the lemon mix. That is how you get the two clean layers in the photo – a shortbread base and a thick, set curd on top.

Ingredients

Crust

  • 1 1/2 cups (150g) fine blanched almond flour
  • 3 Tbsp powdered erythritol or monk fruit
  • Pinch of salt
  • 4 Tbsp (56g) cold butter, cubed
  • 1 large egg white

Lemon filling

  • 3 large eggs + 1 yolk
  • 1/2 cup (120g) plain Greek yogurt
  • 1/3 cup (30g) vanilla or unflavored whey protein
  • 1/2 cup powdered erythritol
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1 Tbsp lemon zest
  • 1 Tbsp butter, melted
  • Pinch of salt

Finish

  • 1 to 2 Tbsp powdered erythritol, for dusting

Swaps

  • No whey: Add 2 extra Tbsp Greek yogurt. Protein drops a few grams.
  • Coconut flour crust: Use 1/3 cup coconut flour + 5 Tbsp butter + 1 egg. Press thin.
  • Lime: Same juice and zest amounts. Color stays pale.
  • Dairy-free: Coconut yogurt and coconut oil. Chill longer to set.

Pro tips

  • Fresh lemon only. Bottled juice makes a dull filling.
  • Powdered sweetener in the filling. Granular stays gritty.
  • Do not overbake. A slight jiggle sets as it chills. Overbake and it cracks.
