- Sugar-free seasoning
Health notes

- Sugar-free: Check the taco packet.
- Keto-friendly: Each serving stays around 7g net carbs.
Key element — sear the zucchini first
Zucchini dropped into raw beef steams and turns the skillet watery. Brown the coins, set them aside, then fold them back in at the end.
Ingredients
Skillet (4 servings)
- 1½ lb lean ground beef
- 3 medium zucchini, cut into coins
- 1 Tbsp olive oil
- 2 Tbsp sugar-free taco seasoning
- 2 garlic cloves, minced
- ¼ cup water
- ½ cup shredded cheese
- 2 Tbsp chopped cilantro or parsley
- Salt and pepper
Swaps
- Turkey: Use lean ground turkey. Same time.
- No packet: Use chili powder, cumin, paprika, and salt.
- Spicy: Add a sliced jalapeño with the garlic.
- Extra cheese: Another ¼ cup raises fat a little.
Instructions
| 1 | Sear the zucchini. Heat the oil in a large skillet. Cook the coins until both sides are browned, about 3 minutes a side. Salt them. Set aside. |
| 2 | Brown the beef. In the same skillet, cook the beef until no pink remains. Drain extra fat. Stir in garlic and taco seasoning. Add the water and simmer 2 minutes. |
| 3 | Fold in. Return the zucchini. Toss just until hot. Do not cook it back to soft. |
| 4 | Finish. Sprinkle the cheese and herbs over the top, like the photo. Rest 2 minutes, then serve 4 portions. |
Pro tips
- Thick coins hold their shape. Thin slices turn to mush.
- Drain the beef if it looks greasy. The card number assumes lean meat.
- Sugar-free seasoning is what keeps this at 7g net carbs.
- Cheese goes on at the end so it melts, not burns.
- Macros are per serving, 4 from this skillet.
