Cheesy Zucchini Ground Beef Bake
Layers of browned beef, sliced zucchini, and a melted cheese lid – lasagna energy, no noodles
This is the weeknight casserole that looks like a lasagna slice and eats like a steak dinner. Ground beef gets a hard brown, zucchini rounds stand in for pasta, and mozzarella plus cheddar melt into the gaps. No flour, no noodles – just protein, greens, and a golden top.
About 45 minutes start to table. Rest it 5 minutes so the spoon comes out clean.
Why you’ll love this bake
- 38g protein per serving – a real dinner, not a side
- Only 7g net carbs – zucchini instead of pasta
- One skillet plus one dish, about 45 minutes
- Melted cheese lid with browned beef on top
- Reheats well for meal-prep lunches
- Looks like lasagna without the noodle carbs
Health notes
- High protein: Beef plus mozzarella and cheddar.
- Low carb: Zucchini rounds replace lasagna noodles.
- Zucchini: Volume, potassium, and very few carbs.
- No flour: The cheese and a short rest set the layers.
Key element – dry the zucchini
Zucchini is mostly water. Salt the slices, wait 10 minutes, then pat them dry. Skip this and the bake weeps into soup. A dry slice keeps the cheese golden and the spoonful stacked.
Ingredients
Beef layer
- 1 1/2 lb (680g) lean ground beef (90/10 or 93/7)
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- 3/4 tsp salt + 1/2 tsp black pepper
- 3/4 cup low-carb marinara or crushed tomatoes
- 2 Tbsp tomato paste
Zucchini and cheese
- 3 medium zucchini, sliced into 1/4-inch (6mm) rounds
- 1/2 tsp salt, for drawing water
- 1 1/2 cups shredded mozzarella
- 3/4 cup shredded cheddar
- 1/4 cup grated Parmesan
- Chopped parsley to finish
Swaps
- Turkey: Use ground turkey and add 1 Tbsp olive oil so it does not dry out.
- Spicy: Add red pepper flakes or a spoon of chopped jalapeno with the onion.
- Extra veg: Layer a handful of spinach over the beef before the last cheese.
- Dairy-light: Cut mozzarella to 1 cup and skip the cheddar.
Instructions
| 1 | Dry the zucchini. Heat oven to 400 F (200 C). Toss zucchini rounds with 1/2 tsp salt. Lay on a towel 10 minutes, then pat very dry. This is what keeps the bake from going watery. |
| 2 | Brown the beef. In a large skillet over medium-high, cook beef and onion until the meat is browned and the onion is soft, 6 to 8 minutes. Drain extra fat. Stir in garlic, Italian seasoning, paprika, salt, and pepper 30 seconds. |
| 3 | Sauce it. Stir in tomato paste and marinara. Simmer 2 to 3 minutes until thick, not soupy. Taste and adjust salt. The mix should mound on a spoon. |
| 4 | Layer. In a greased 9-inch baking dish, spread half the beef. Overlap half the zucchini. Sprinkle half the mozzarella and cheddar. Repeat with remaining beef, zucchini, and cheeses. Finish with Parmesan and a few extra beef crumbles on top. |
| 5 | Bake and rest. Bake 25 to 30 minutes until the cheese is melted and browned in spots and the zucchini is tender. Rest 5 to 8 minutes. Slice, garnish with parsley, and serve. |
Pro tips
- Pat the zucchini twice if it still feels wet. Water is the enemy of a clean slice.
- Use a thick marinara. Thin sauce plus zucchini = soup.
- Overlap the rounds like shingles so every bite has zucchini and beef.
- Resting is not optional. Five minutes lets the cheese set so the spoon lifts a stack.
- If the top browns too fast, tent loosely with foil for the last 8 minutes.
