These are not thick patties. You swirl a zucchini-egg batter in a skillet until it laces gold, then fold it over mozzarella, a tomato slice, and dill. They stack on a platter like the photo and eat like a hand-held omelet.

Batter
- 2 medium zucchini (about 1 lb / 450g), shredded
- 3/4 tsp salt, for drawing water
- 4 large eggs
- 1/3 cup (30g) shredded mozzarella, in the batter
- 2 Tbsp chopped fresh dill
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 Tbsp olive oil or butter, for the pan

- 3/4 cup shredded mozzarella
- 1 small tomato, thinly sliced (6 slices)
- Extra dill to finish
Swaps
- Yellow squash: Use the same weight. Squeeze it just as dry.
- Cheddar: Swap mozzarella for sharp cheddar in the fold.
- No tomato: Fold with cheese and dill only, or add a thin ham slice.
- Herb swap: Chives or parsley if you do not have dill.
Instructions
